Ingredients :
- English cucumber – 1
- Sushi rice (cooked)
- Carrots – 1, Shredded and peeled
- Raisins – ¼th cup
- Cream cheese – ½ cup
- Chives
Method :
- Cut the English Cucumber into 8 equal slices.
- Add a thin layer of cooked sushi rice onto the slices.
- Place small portions of the chopped carrots at one end of the cucumber slices.
- Now, add a spoonful of cream cheese and some raisins into it.
- Finally, roll up the cucumber slices and use chives to secure them.
Candy Sushi : If your kids go to Child Care centers, you can pack these sushi rolls in their lunchbox.
Ingredients :
- Margarine or butter – 1 tbsp
- Marshmallows – 20
- Crisp Sushi rice cereal – 3 cups
- Fruit chewy snack sheets – 10
- Bite-size chewy fruit snacks
Method :
- In a large bowl, mix the marshmallows with melted butter. Put the bowl inside the oven and microwave it for around 2 minutes or until all the marshmallows melt.
- Now add the cereal to the mix and blend it well.
- Unroll the fruit snack sheets and press 3 tbsp of the cereal mixture on each sheet. Leave around half an inch off of one side.
- Place 3 to 4 chewy fruit snacks down the center of the sheet and roll each sheet tightly.
- Now, cut the rolls into smaller pieces and the goodness of it.
Cucumber and Tuna Sushi : Many kids in La Habra CA preschools bring this healthy sushi recipe for their lunch.
Ingredients :
- Cucumber – 1
- Avocado – 1 or 2
- Mayonnaise – 1 tbsp
- Cooked Sushi rice – 1 cup
- Canned tune – 80 gms
- Lemon juice
Method :
- Take the washed cucumber and peel it with a peeler.
- An apple corer can help you to make a tunnel through the cucumber. If you want, you can widen the hole by passing the corer a few times through the cucumber.
- Now take one bowl and mash the mayonnaise, avocado, and lemon juice. Drain the tinned tuna and mix it properly with the rice.
- Take enough amount of the rice mixture and fill the cucumber tunnel such that it stays packed inside. Using wet hands would be good while pushing the rice mixture into the tunnel to ensure it stays inside.
- In the end, cut the filled cucumber rolls into thick slices and then serve.
